We are excited to introduce you to our the best seller sweets in Europe, especially in France.
The name is:
“Sablé kinako et caramel beurre salé.”
This unique creation combines the traditional Japanese ingredient, kinako (roasted soybean flour), with a plant-based salted caramel at its center, layered over a kinako cookie base. This is topped with a layer of chocolate and finished with a sprinkle of kinako powder.
What’s even more remarkable? It’s completely gluten-free and dairy-free!
We developed this delightful sweet in collaboration with a French culinary expert, aiming to create a dessert that those with gluten or dairy allergies could also enjoy. While our intention wasn’t to specifically exclude dairy, the result naturally became a plant-based sweet.
In Europe, where food allergies are more common, many people expressed their frustration with gluten-free and dairy-free sweets often being bland and unappealing. This inspired us to craft a dessert that is not only allergen-friendly but also rich, flavorful, and indulgent.
The secret to
its extraordinary taste in the process.
Believe it or not, it takes an entire day to make!
Mass production is simply not possible.
The gluten-free kinako cookie base is incredibly delicate and cannot be shaped easily, so no machinery can be used in the process. Every piece is crafted entirely by hand.
After baking, the cookies must cool completely and harden before the caramel can be poured.
The caramel itself is another challenge—it cannot simply be heated. For example 30 minutes every time. The cooking time varies depending on the temperature and subtle differences in the ingredients each day, requiring a high level of expertise.
Once the caramel has fully cooled, we carefully pour 60% cacao couverture chocolate over the top and wait for it to set.
Only after it has fully cooled do we check the texture for that day, cautiously cut each piece, and finally, wrap it with care.
All of this is done entirely by hand, making it difficult to delegate the process to others.
This is why mass production is not an option.
Starting the preparation in the morning, the final product is only completed by evening.
After all, sweets crafted with such care
and attention to detail are undeniably delicious.
